Seth Gabrielse

Accomplished chef and baker from Toronto, Seth has been living in Montréal for ten years now. Trained with renowned chefs such as Susur Lee (Susur restaurant in Toronto), James Macguire (Le Passe-Partout restaurant in Montréal) and Racha Bassoul (Anise and BazAae restaurants in Montréal), he perfected with them his solid work technique as well as a respect for food and its preparation. He enjoys getting his produce from quality local farmers and knows how to honor Quebec products in his cooking.

From 2011, he embarks on the adventure of Foodlab for its creative spirit, obviously with his partner Michelle Marek. Seth enjoys as much going from an elaborate cuisine with inventive flavors and aromas, as becoming, on a warm summer night, the terrace BBQ master !

Michelle grew up eating wild strawberries in the forests of Ontario and British Columbia. Pastry cook who likes experimenting as much with sweet than salty culinary creations, her cooking is a testimony to memory : of aromas, of emotions, and of her childhood walks.

Following her travel interests, and the journeys she embarks you on in your plate, she redraws a new map for desserts, from fruit salad to mead, walnut and plum pie, or panna cotta... Her signature dessert : the «Bohemian rhapsody», a hops granité garnished with fresh strawberries, malted creme, caramelized rye bread crumbs and wild mint flowers, inspired by her mother who, as a teen, would do hop-picking and then enjoy a beer with rye bread.
